Ingredients

  • 10 oz pitted dates

  • 20 oz ripe avocados, flesh only

  • 2 oz cocoa powder

  • ½ tsp vanilla extract

  • ⅛ tsp salt

  • 6 oz almond milk

  • fresh raspberries, to garnish

  • fresh blueberries, to garnish

  • unsalted pumpkin seeds, to garnish

Preparation

Step 1


Place dates into mixing bowl and chop 20 sec/speed 5. Scrape down sides of mixing bowl with spatula.



Step 2


Add avocado, cocoa powder, vanilla extract and salt and mix 20 sec/speed 3.5. Scrape down sides of mixing bowl with spatula.



Step 3


Add almond milk and mix 1-2 min/speed 5, until combined. Transfer to bowls, cover with cling wrap and refrigerate until ready to serve. Garnish with raspberries, blueberries and pumpkin seeds just before serving.



Tipps & Tricks

  • Can be prepared 1 day in advance.

  • Chocolate Avocado Mousse can be served garnished with fresh summer berries, topped with coconut whipped cream or toasted coconut flakes, granola or toasted pistachios.
